绿色食品并不是说：是“绿颜色的食品”，而是指“安全营养无公害的食品”。
目前，食品受环境污染，给人们的健康带来很大危害，以引起全世界关注。为保护生态环境，提高食品卫生质量，农业部把开发“绿色食品”作为拳头厂品，并严格规定了三个必备标准：
1、产品的原料产地具有良好的生态环境；
2、原料作物的生长过程及水、肥、土条件必须符合一定的`无公害控制标准，并接受农业部环境保护监测中心的监督；
3、产品的生产、加工及包装、储运过程应符合《中华人民共和国食品卫生法》的要求，最终产品需由中华人民共和国食品卫生标准检测合格才准予出售。
进商场或超市，人们会发现，有些食品包装上印有一种由太阳、叶片和蓓蕾组成的绿色食品商标，并标有“经中国绿色食品发展中心许可使用绿色食品标志”的字样，它表明这种食品是出自洁净、良好的生长环境从未登过污染，被称为绿色食品。
是不是绿色食品，须经中国绿色食品发展中心根据国际、国内一系列严格标准的检测，通过了才能被确认是绿色食品。绿色食品一般认定期为三年，超过年限要重新认定，在认定为绿色食品认定期内，中国绿色食品发展中心随时可对该产品进行抽检，如果发现不合格，立即取消绿色食品资格。到目前为止，已有2400多种食品被定为A级绿色食品，50多种被定为AA级。涵盖粮油、果品、蔬菜、畜禽蛋奶、水海产品、酒类、饮料类等，其中初级产品占30％，加工产品占70％。
绿色食品标准要求很严格，它分为2个技术等级，即A级和AA级。
A级表示除了生产地的环境符合标准外，生产过程中严格按绿色食品生产资料使用准则和生产操作规程要求，限量使用限定的化学合成生产资料，并积极采用生物技术和物理办法，保证产品质量符合绿色食品产品标准要求。
AA级要求更高，不仅生产地的环境质量符合标准，而且生产过程中不使用化学合成的农药、肥料、食品添加剂、饲料添加剂、兽药及有害于环境和人体健康的生产资料，通过使用有机肥、种植绿肥、作物轮作、生物或物理等技术，培肥土壤，控制病虫害，并禁止使用基因技术。
消费者如何鉴别是不是绿色食品经中国绿色食品发展中心认定的绿色食品在各大商场，超市上有卖，消费者尽管买，放心吃。市场上几乎都是A级产品，AA级的很少，20xx年第四季度，国家检测中心对市场的绿色食品抽查，100％合格，也即没有发现假冒伪劣产品。绿色食品都有中国绿色食品的统一标志编号，买时首先看有无标志，其次看出厂日期和保质期，编号形成为：LB X X XX XX XX XXX X。LB是绿色食品标志的代码，后面的X代表12位数字，其含义如下：第1、2位代表产品分类，第3、4位是批准年度，第5、6位是国别（我国为01），第7、8位是省区，第9、10、11位是产品序号，最后一位是产品级别（A级为l，AA级为2）
