闷黄是黄茶类制造工艺的特点，是形成黄色黄汤的关键工序。从青到干燥结束，都可以为茶叶的黄变创造适当的湿热工艺条件，但作为一个制茶工序，有的茶在青后闷黄，有的则在毛火后闷黄，有的闷炒交替进行。针对不同茶叶品质，方法不一，但殊途同归，都是为了形成良好的黄色黄汤品质特征。
影响闷黄的因素主要有茶叶的含水量和叶温。含水量多，叶问愈高，则湿热条件下的黄变过程也愈快。
