闷黄是黄茶类制造工艺的特点,是形成黄色黄汤的关键工序。从青到干燥结束,都可以为茶叶的黄变创造适当的湿热工艺条件,但作为一个制茶工序,有的茶在青后闷黄,有的则在毛火后闷黄,有的闷炒交替进行。针对不同茶叶品质,方法不一,但殊途同归,都是为了形成良好的黄色黄汤品质特征。

影响闷黄的因素主要有茶叶的含水量和叶温。含水量多,叶问愈高,则湿热条件下的黄变过程也愈快。
