“小乖乖来小乖乖，我们说，你们猜······”大家一定都知道这是一首云南民歌----“猜调”唱的就是云南人最爱的“米线”。
提起云南的过桥米线，我不禁想起了一个美丽的传说
很久以前，有一个湖叫“南湖”，湖中有一个小岛，湖湖边住着一对恩爱的夫妻。妻子每天经过一座桥，给岛上读书的丈夫送饭，但总因桥太长，他只能吃到凉了的饭菜妻子为此很苦恼。于是熬了点鸡汤送过去，没想到这汤竟然把丈夫的嘴烫了，她十分心疼。原来汤上面有一层油有保温作用。妻子便得到了启发。从此她每天都用滚烫的鸡汤煲米线给丈夫吃从此丈夫就吃上了热腾腾的饭。
“过桥米线”就是由此得名的。瞧，一盘盘令人眼馋的材料摆满了桌子，千万不要碰着汤，否则会烫伤你的。它是由火腿肠和壮鸡熬成的浓汤。首先不要急着先放米线，应把生鱼片、鱿鱼丝等，烫到八成熟后再放入蔬菜，有白菜、玉兰片······要是有鹌鹑蛋，味道会更鲜美的。还可以按个人的喜爱可以放辣椒油。霎时，一碗白、红、绿色彩鲜艳；香、辣、鲜美味绝伦的过桥米线摆在你面前。
这便是云南的过桥米线。

过桥米线，以其制汤考究，吃法特异，滋味鲜甜清香，咸淡相宜而成为云南特有风味小吃。过桥米线主要以汤、肉片、米线再加佐料做成。汤用肥鸡、猪筒子骨等熬制，以清澈透亮为佳；将鸡脯、猪里脊、肝、腰花、鲜鱼等切成薄片，摆入小碟；米线则以细白、有韧性者为好；同时备有豌豆尖、黄芽韭菜、嫩菠菜等。吃时，以大“海碗”盛汤，加味精、胡椒、熟鸡油，汤滚油厚，碗中不冒一丝热气。汤上桌后，将鸽蛋搕入碗内，继将肉片氽入汤中，轻轻一搅，霎时变得玉兰片似的雪白、细嫩。然后放入鲜菜、米线，配上辣椒油、芝麻油等，便可食用。碗中红白黄绿相交辉映，奇香沁人，使人胃口大开。
我还听过关于过桥米线的一个传说，从前，有个书生要去进考，一天，天气很冷很冷，他的妻子做了一碗米线，经过很常的路他来到了一条桥，过了桥便来到了书生休息的地方，到了那米线还是很热，书生吃过后觉得十分好吃，后来他中了进士，因此姑娘为他送米线的时候过了这条桥，于是便叫过桥米线。
