这本书的111个小实验我最感兴趣的是这个神奇的红茶。
实验需要两包红茶、水、电水壶、柠檬、榨汁机、牛奶。玻璃杯、
实验步骤：1用电水壶烧大约半升水。2分别用杯子里的水泡开两杯红茶。3把茶泡开，并取出茶包。4将柠檬榨成汁。5将柠檬汁倒入其中一杯并观察。6再往已经倒入柠檬汁的杯子里倒入一些牛奶。
试验结束后将同时含有柠檬汁和牛奶的茶水倒掉。剩下的那一杯茶，你可以喝掉，里面可以放柠檬汁，或者放牛奶。
实验现象：加入柠檬汁之后，红茶的颜色变亮了。而向加入柠檬汁的茶中倒入牛奶后，牛奶却凝结成块了。
原理解释：柠檬汁会破坏牛奶中的乳蛋白。这一过程被人们称为“非实用化”。同样，煮鸡蛋或煎鸡蛋时也会发生同样的情况。因为高温会破坏蛋白的结构，并使蛋白固化。牛奶中所含的蛋白也会改变结构，它会变硬并在茶中形成块。
此外，这个实验也适合于果茶。果茶中会常加入维生素C(抗坏酸以及可以增强自然色的柠檬酸，此外果茶本身也含有酸所以对于牛奶而言，果茶酸性太强，如果将牛奶倒入里面，牛奶就会凝结成块。
