小时候，我住在农村里。农村的家家户户门前或院后，都有一棵或几棵的香椿树。在我的记忆里，春天的味道就是香椿。
以前，每到初春时节，我就常常坐在门口，呆呆地望着香椿树，期待它能早早地发芽，就可以吃到好吃的香椿头。这一天，我刚起床，忽然看见香椿树枝头上绽开了一簇暗红色的芽，那模样，犹如一位披着红纱的仙女。我激动极了，拿起钩子，把发芽的香椿全都扒下来。
我捧着香椿跑到奶奶面前：“奶奶，快给我做香椿蛋饼吃。”
“好……好！”奶奶边答应边把香椿择好，与面粉、鸡蛋液拌在一起，再撒上点盐。接着，就用油刷在锅上刷一层油。把面粉蛋液倒进锅里，做成香椿蛋饼。我吃了四张饼，吃得小肚儿圆溜溜的，活像一个小皮球。
后来，奶奶会把吃不完的香椿晒干了保存起来，在夏天做上一碗凉面，放上一些香椿，“滋溜……滋溜”地吮着凉面。等凉面下肚，嘴里还留有香椿的清香呢。就这样，夏天也在这香椿的美味里度过了。
这种香椿干可以吃一年，一直到又可以吃上鲜嫩的香椿了。
直到现在，我最喜欢的还是香椿。但在城里吃到的香椿，再也品不出以前的味道了……
我的童年至今还留有香椿的`味道，我喜欢香椿。
