南京板鸭始于六朝，是南京市的`一水乡小镇湖熟久负盛名的特产，后传入民间。关于“板鸭”这个得名，还有一个故事呢。相传在南北朝时，侯景叛乱，围台城，梁朝的官兵为了守城顾不上吃饭。时值初秋，南京城的老百姓便取白鸭洗净，加盐和佐料煮熟后，把几十只鸭捆成一捆，送到城头时，鸭子已又干又扁。开捆煮食后，鸭子香味扑鼻，士兵们高兴地说：“这压板了的鸭子真好吃，干脆就叫板鸭吧。”“板鸭”由此得名，它的做法也一直流传至今。
南京板鸭在生产工艺上也别具一格。宰技术要极其精湛，刀口要小，出尽。对毛的处理也很讲究，先烫掉大毛，再拔掉小毛，这样的鸭子食客吃起来才会肥而不腻。
